April 22nd is Earth Day – a global celebration that’s close to our hearts. Long before sustainability became a buzzword, we’ve been passionate about taking care of the land. Our beginnings as an ecological farm go back decades – and remain rooted in all that we do.
From our fresh organic produce (proudly officially certified) to our saltwater swimming pool, solar energy and protection of wildlife habitats, we support the earth’s natural balance. It’s an ethos of purity and respect that’s also vibrantly creative. We love to watch things grow, nurturing new colours and flavours with every season. Each month brings fresh moods and inspirations.
As spring blooms in wild chaos, there’s a playfulness in the air. The days are getting longer, the weather is getting warmer, and our gardeners are setting to work on their tractors with the unbridled energy of children ready for a joyride. They’re working hard, but they’re also spreading their enthusiasm throughout the land. We believe this helps our garden to thrive – after all, it’s well known that plants are highly receptive to good vibes!
The heavy rains and sunshine of the last few weeks have made the earth perfect for planting and our gardeners are busy sowing the seeds of lettuces, beans, broccoli, chard and more. Once it’s grown, this tasty veg will make its way directly to the kitchen. Our greatest joy comes from transforming the cultivated produce into bright seasonal dishes, extra-virgin olive oil and homemade jams and chutneys.
Here the raw beauty of the land meets inventive possibilities. As the plants grow, so does our menu. While our classics always feature, Cas Gasi’s chefs enjoy experimenting with innovative new flavours. Ever reimagining, yet remaining true to our roots, we’re both constant and evolving. Underpinning it all is our love of things created with care and authenticity – a simple pleasure to be found no matter what the season!
